Dates are easily digestible and furnish the body with required energy for physical activities in about half an hour. Dates are rich in natural fibres, potassium, and magnesium. During Ramadan, date recipes are ideal to start iftar ( breaking fast), as the body requires energy to digest the meal. This energy is drawn from the natural sugars of dates. Here is a simple, and easy dessert recipe using dates and rice. This recipe is ideal for Sahur (sehri) as well.
Ingredients:
4 cups cooked rice
4 cups milk
6 tablespoons white sugar
1 lb dates, pitted and chopped
Method:
1. Place the rice into a food processor or blender, and process until coarse.
2. Transfer to a saucepan. Stir in milk, sugar and dates.
3. Simmer over low heat. Stir occasionally until the dates are tender, for about 20 minutes.
Serve hot or chilled.
