Ingredients:
2 cups all-purpose flour
3/4 cup sugar
3-1/2 teaspoons baking powder
2 large eggs, yolks separated
1-1/2 cups milk
1 cup butter, melted
1 teaspoon vanilla extract
Method:
- In a bowl, combine flour, sugar and baking powder.
- In another bowl, lightly beat egg yolks. Add the milk, butter and vanilla. Give it a light whisk. Pour into dry ingredients and combine. If you mix too much, the batter will become bubbly and waffles may become soft.
- Beat the egg whites separately until stiff peaks form. Add to the batter and combine.
- Preheat the waffle iron according to instructions in the manual. Pour just enough of the batter to cover the griddle – about 2/3 cup will do. Generally waffles are done in about 5 minutes.
You can top it maple syrup, heavy cream, chocolate sauce, bananas, strawberries or EVERYTHING if you love calories 🙂
