2 cups all-purpose flour

3/4 cup sugar

3-1/2 teaspoons baking powder

2 large eggs, yolks separated

1-1/2 cups milk

1 cup butter, melted

1 teaspoon vanilla extract

  1. In a bowl, combine flour, sugar and baking powder.
  2. In another bowl, lightly beat egg yolks. Add the milk, butter and vanilla. Give it a light whisk. Pour into dry ingredients and combine. If you mix too much, the batter will become bubbly and waffles may become soft.
  3. Beat the egg whites separately until stiff peaks form. Add to the batter and combine.
  4. Preheat the waffle iron according to instructions in the manual. Pour just enough of the batter to cover the griddle – about 2/3 cup will do. Generally waffles are done in about 5 minutes.

You can top it maple syrup, heavy cream, chocolate sauce, bananas, strawberries or EVERYTHING if you love calories 🙂
