This recipe was created one evening, when I was in haste and the shortest route to dinner was with the left over rice. I didn’t know it would turn out to be a finger-licking dish. Here is the quickest delicious fix with chicken and rice. It’s also ideal for your child’s lunch box.
Ingredients:
- 2 – 3 onions, cut in rings
- 2 – 3 cloves garlic chopped
- ½ kg cooked rice
- 2 tbsp red chili paste
- 2 tbsp soya sauce
- 2 capsicum chopped
- Chopped parsley
- 1 cup French beans chopped
- 250gms boiled chicken
- Salt and pepper to taste
- 2 tbsp oil
Method:
Heat oil in a pot and add the garlic and the chicken. Cover and cook till garlic is light brown.
Now add the capsicum, french beans, onions, salt and pepper. Also, add the chili paste and soya sauce. Cook till the vegetables are tender.
Add the parsley and rice. Cover and cook gently for 3 to 5 minutes.
