Pepper Chicken

Pepper chicken is one of my favourites at a South Indian restaurant. The chicken is heavily spiced and the dish is simply addictive. Pepper chicken recipe is one thing worth experimenting in your kitchen!

Marinate:

500 grams boneless chicken pieces

1/2 tsp ginger paste

1/2 tsp garlic paste

2 tbsp freshly powdered peppercorns

1/2 tsp garam masala powder

For the sauce:

1/2 tsp ginger paste

1/2 tsp garlic paste

8 curry leaves

1 large tomato pureed

2 tbsp chopped coriander leaves

3 tbsp oil

Salt

 

Method:

1. Marinate the chicken for at least two hours.

2. Shallow fry the chicken till golden brown.

3. In the same oil, add curry leaves and ginger garlic paste. Saute.

4. Now, add tomato puree and simmer for about five mins.

5. Add the chicken pieces and allow to cook for ten minutes. You can cook till you get the desired consistency (gravy or dry).

Pepper chicken is usually served as a starter. You can add hot water to the dish for a curry.
