Mutton Rogan Josh

Rogan Josh is an aromatic lamb dish of Persian origin, which is one of the signature recipes of Kashmiri cuisine. Rogan josh was brought to Kashmir by the Mughals, whose cuisine was in turn influenced by Persian cuisine. Mutton Rogan Josh is a beautiful blend of aromatic spices and flavors. Here’s a dish that deserves to be served on special occasions like Eid.

Ingredients:

1/2 Mutton

1 cup Onion chopped

2 tbsp Tomato paste

1 tsp Salt

1 tbsp whole spices (peppercorns, cardamoms, cloves, cinnamon stick)

2 tbsp Lemon juice

2 tbsp Fresh cream

1/2 cup Oil

Grind to paste:

1 tsp Fennel seeds

8 Green chilies

2 tsp Ginger garlic paste

1 1/2 tsp Chili powder

1 1/2 tsp Coriander powder

1 Onion

2 tbsp chopped coriander leaves

Method:

1. Boil mutton in water till tender, heat oil.

2. Add the whole spices and chopped onion. Fry till light golden.

3. Add ground masala paste and salt. Fry well.

4. Add boiled mutton and mix well. Add tomato paste and water. Cover and cook till oil separates.

5. Add fresh cream and lemon juice. Mix well and allow to cook for five minutes.

Serve with Naan or Paratha.
