Potatoes in Tahini Sauce

Tahini is a paste made from ground sesame seeds. Famous with the Greeks and Arabs alike, tahini is an important ingredient in a hummus recipe. It is easy to prepare the tahini sauce. All you need is toasted sesame seeds and olive oil. and this tahini recipe is with a twist. The pungent flavor of garlic makes this tahini recipe ultra-delicious. This tahini recipe can also be used to prepare garlic hummus.

Ingredients:
4 medium-sized potatoes
1 cup tahini sauce
1 tbsp fresh parsley chopped,

For the tahini sauce :
3 cloves garlic
½ cup tahini (raw sesame paste)
¼ cup lemon juice
¼ cup of cold water
Salt to taste

Method:

1. Boil the potatoes, skin on, in salty water until tender.

2. Prepare the tahini sauce. Mince the garlic with a little salt. Place it in a bowl, slowly add the tahini paste and lemon juice, and whisk it well.

3. Add a little water at a time adjusting the consistency as required. I usually prefer medium-thick you can adjust it to however you like.

4. Add some salt to give it a tangy taste. Add in the chopped parsley and blend it well.

5. Peel the potatoes and dice into a serving bowl. Pour the tahini over it, enough to cover the potatoes.

Serve as a salad or a side dish.
