Hummus with Toasted Pine Nuts

Hummus is a dip famous in the Middle Eastern countries. Chick peas and tahini paste are the star ingredients. There are many variation of hummus recipes but, of course, the original is the best. This homemade hummus is a slightly different version – we’ve added toasted pine nuts to it. Homemade hummus is really simple – this recipe is an example. Hummus is worth being stored for sometime – especially in Ramadan. At least a dozen ramadan recipes would taste better with the hummus dip.

Ingredients:
2 cups of canned chick peas (skinless)
1/2 a cup of lemon juice
2 – 3 cloves of garlic crushed with salt
1/3 cup tahini (sesame paste)
Salt to taste
1 tbsp toasted pine nuts

1 1/2 tbsp olive oil, fresh parsley chopped and paprika for garnish

Method:
1. Wash the canned chick peas thoroughly in running water. Puree in a blender.

2. Pour it in a bowl and add in the crushed garlic. Slowly blend in the tahini paste and half of the lemon juice.

3. Adjust the consistency and flavor with the remaining lemon juice to make it into a thick smooth paste.

4 Pour into a shallow serving dish. Even out the top by running the back of a spoon in a circular motion.

5. Pour the olive oil over the hummus and garnish with chopped parsley. Sprinkle paprika and line it with the toasted pine nuts.

Hummus with pine nuts is ready! Serve with Arabic bread (khubz)
