Cheese rolls

This dish can be one of your best bets to get your non-veg family members to eat vegetarian food during iftaar – without complaining. In fact, they’re going to enjoy it. You can serve these cheese dinner rolls during snack time or as appetisers. You can replace the thyme with flavours or herbs of your own choice. Maybe you’ll create your own version!!

Ingredients:

1. 7 1/2 cups whole wheat white flour (mix equal amounts of regular white flour with traditional whole wheat flour)
2. 1/2 tsp salt
3. 2 tbsp sugar
4. 5 tsp active dry yeast
5. 1 egg, beaten
6. 1 1/2 cup fresh or dry thyme (if dry, soak in warm water few minutes before using)
7. 1 cup olive oil
8. 1 1/2 cup lukewarm milk (preferably low fat)
9. 4 cups shredded cheese

Method:

1. In a large bowl, combine the flour, salt, sugar, and yeast. Add the egg and with a large wooden spoon mix into the dry ingredients.

2. Stir in the thyme. Make sure the leaves are separated before adding so they won’t clump together.

3. Stir in the olive oil. Add the water and knead until it forms a dough. Leave for at least an hour to rise.

4. Coat a baking sheet with a generous amount of olive oil. Divide the dough into balls roughly the size of table tennis balls. Spread each ball on your palm, place some shredded cheese in the centre. Seal the edges together to enclose the cheese.

5. Place on a baking dish and bake on 350 F until golden brown.
