Brinjal-Potato-Capsicum Fry

Baingan-aloo-shimla mirch ki sabzi can be defined as a colorful, nutritious, flavorful, and quick vegetarian dish. Honestly, this is the perfect dish to make even on days you are not enthusiastic to cook. Mildly spiced, the brinjal-potato-capsicum fry can be paired with rotis. Ingredients:

1 brinjal or 2 medium eggplants, diced into small cubes
1 capsicum, diced into cubes
1 medium-sized potato, diced into small cubes
1 tsp cumin seeds
1/2 tsp red chilli powder (adjust according to taste)
1/4 tsp turmeric powder
2 – 3 tbsp oil to shallow fry
Salt to taste

Method:

1. Heat about 2 tbsp oil in a skillet and shallow fry the brinjal pieces on high heat till brown on all sides. Remove & keep aside.

2. In the same skillet, shallow fry the potatoes till brown on all sides. Remove & keep aside.

3. Add 1 tbsp oil in the same skillet. When hot, add the cumin seeds and allow to splutter. Reduce heat and add the spice powders. To avoid burning the spices, add 1 – 2 tablespoon of water.

4. Throw in all the vegetables together and sprinkle salt. Mix lightly. Don’t overcrowd the skillet. Cover and allow to cook on low heat for a maximum of 5 minutes.
